# Slurp > Ramen shop in Copenhagen with two rooms, founded in 2017 by chef Philipp Inreiter. > Broths are slow-cooked, noodles are made in house each morning with locally milled > Bornholm flour, and toppings shift with the seasons. No reservations, no delivery. ## About Slurp is grounded in Japanese technique but shaped by local ingredients and the city around it. Everything is made from scratch: broths simmered for hours to entire days, noodles rolled and cut daily on a custom-built machine, tare adjusted to the season and the humidity. Slurp does not describe itself as an authentic Japanese restaurant. Borgergade 16, 1300 Copenhagen. 36 seats, better suited to small groups. Open Monday to Sunday, 11:30 to 15:00 and 17:00 to 22:00. Arriving before opening is the best chance of a seat. - Slurp does no delivery. Ordering is in person. - The veggie ramen is vegan without the egg. Other dietary needs can often be catered for, but gluten free cannot be accommodated. - Dogs are welcome at both rooms.
