By December the sun is down before most people leave the office, and Copenhagen turns into a city experienced mostly indoors, in the dark, in the wet. That changes which restaurant deserves a walk across town: not the one with the nicest courtyard in July, but the one that is warm, reachable, and still taking guests once the light has gone.

Torvehallerne is easy to photograph and hard to eat lunch in. Most visitors walk its two glass halls once, buy a coffee and a pastry, and leave still hungry, because a market built for shopping for dinner is not the same thing as a room built for sitting down to lunch right now. The line between casual and serious in this city has nothing to do with the shopping list and everything to do with who decides the order of the plates, which is why a 275 kroner set meal can out-cook a tasting menu twice its price.

Cosy is a property of a room and a service style, not a price band, which is why some of the warmest evenings in this city cost 275 kroner and some of the coldest cost four times that.

Copenhagen is expensive in the way a city is expensive when it has decided that cheap food should still be made properly, and the gap between a 75 kroner supper and a 2,500 kroner one turns out to be about who chooses the order of the plates.

A city full of counters ought to be the easiest place in Europe to eat by yourself, and mostly it is, as long as you know which door leads to a seat and which one leads to a wait you cannot win.

Copenhagen's Japanese cooking has stopped being one scene and become four, and they barely overlap. One chef now owns three of the best counters in the city, a wine bar serves the only Japanese breakfast worth crossing town for, and the cheapest full meal on this list is also one of the most precisely cooked.

The restaurants with a view of a Copenhagen landmark are rarely the ones worth eating in. The good food is a street back, it costs a fraction as much, and most of it will seat you without a booking.

Copenhagen has quietly become a counter city, and the seat is the least interesting thing about it. What actually separates these eleven rooms is whether the kitchen cooks you a sequence it planned weeks ago, or one plate you chose thirty seconds before it was made.

Copenhagen's booking culture is not the whole city, and the rooms that opted out of it are not consolation prizes. A dozen kitchens either never took a reservation or hold real seats back on purpose, and telling those two apart is what decides whether you eat well tonight.
